Welcome to the World of Bento!

What does the word Bento mean?

·         The word “Bento” is common with Japanese Cuisine meaning “a single-portion takeout or home-packed meal.  Traditional Bento consisted of rice fish or meat and cooked vegetables usually in a box-shaped container. 

·         Bento has become increasingly popular in North America and has gained much popularity! The ideas and concept behind a bento box is great for the environment friendly a “reusable compact container” that holds a large assortment of food options.

We have just ordered a bunch of  bento products to make mealtime fun like egg molds, silicone cooking molds - there not for sale yet, we are testing their effectiveness.  We were going to offer short video clips on our blog, like a cooking class but online -showing how to use the products and different ideas. Is this something that you think people would be interested in? We are hoping to start offering the products and videos by June 2012 but want to know how much interest there is as this would be a big investment as you have to mass order these products. Thanks ladies for your honest feedback! We are putting a tiny survey together on our blog at www.tiny-wiggles.blogspot.com - to log the interest we get if people could comment that would be great.

RECIPE- Brownies with carrot and spinach

I am sure everyone has experience the task of trying to cook healthy meals for their wee ones! What a hard task it is to include all food groups, to make sure they eat their veggies, fruit meat and the list goes on.
This recipe is from a wonderful book called " Deceptively Delicious" by Jessica Seinfeld

Prep 15 minutes: cooking time 55 minutes: Makes 12 brownies : Packable

Non stick cooking spray
3 ounces semisweet or bittersweet chocolate
1/2 cup of carrot puree
1/2 cup of spinach
1/2 cup firmly packed light or dark brown sugar
1/4 cup of unsweetened cocoa powder
2 tablespoons transfat free soft tub magarine spread
2 teaspoons pure vanilla extra
2 large egg whites
3/4 cup of oat flour, or all purpose flour
1/2 teaspoon of baking powder
1/2 teaspoon of salt

1. Preheat the oven to 350F . Coat an 8x8 inch baking pan with cooking spray
2. Melt the chocolate in a double boiler or oven at a very low flame
3. In a large bowl , combine the melted chocolate, vegetable purees, sugar, cocoa powder, margarine, and vanilla, and whisk until smooth and creamy, 1-2 minutes.
4. Whisk egg whites. Stir in the flour, baking powder and salt with a wooden spoon.
5. Pour the batter into the pan and bake 35 to 40 minutes. Cool completely in the pan before cutting into 12 bars.

These brownies are low in calories only 133 per brownie and saturated fat and 3 grams of fiber.

funbites     Mother’s Day Luv Pancakes


Ingredients

1 cup whole wheat flour

1/4 cup all-purpose flour

1/3 cup uncooked farina (such as Cream of Wheat)

1/3 cup sugar

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 1/2 cups vanilla soy milk

1/4 cup applesauce

1 large egg, lightly beaten

10 Strawberries

Honey




Preparation



Combine flours, farina, and next 4 ingredients (through salt) in a large bowl, stirring with a whisk. Combine milk, applesauce, and egg in a medium bowl, stirring until well blended. Add milk mixture to flour mixture, stirring until well combined. Let batter stand 5 minutes.



Heat a nonstick griddle or skillet over medium heat; coat pan with cooking spray. Pour about 1/4 cup batter per pancake onto pan. Cook 1 minute or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over, and cook 1 minute or until bottoms are lightly browned.



Rock FunBites Luv It! over pancakes to cut into fun heart shape then serve with FunBites heart shaped strawberries and honey!
